When Christopher and Anne flew from the USA to tie the knot in Scotland, they weren’t just looking for a venue — they were following a lifelong dream. Anne had always dreamed of visiting Fyvie Castle, and when Christopher proposed, there was only one place she could imagine saying “I do”.

Set in the heart of Aberdeenshire, Fyvie Castle is a breathtaking 800-year-old fortress steeped in history, legend, and grandeur. From royal visits by William the Lion and Charles I, to ghost stories whispered through the halls, this magnificent example of Scottish Baronial architecture offered a truly magical backdrop for their intimate elopement.

Thistle was honoured to provide the full catering and hospitality service for their special day — from champagne to canapés, and even a last-minute wedding cake!

The Menu

Guests (and ghosts, perhaps?) were treated to a thoughtfully crafted menu celebrating local Scottish produce and global flavours:

Canapés
  • Petit tacos with Mexican salsa
  • Pulled pork sliders on petite brioche
  • Antipasti skewers with marinated olives, mozzarella, and sundried tomato
  • Petite Yorkshire puddings with rare rib of roast beef & horseradish crème fraîche
Starters
  • Fresh Aberdeenshire crab, micro salad, chilli & ginger with lime dressing
  • Traditional Cullen Skink with garlic croutons
Mains
  • Slow-cooked roast rib of prime Aberdeenshire beef with whisky & wild mushroom sauce
  • Pan-seared salmon with asparagus, capers, and a rich butter sauce
Dessert
  • Granny’s apple tart, caramel drizzle, and vanilla pod ice cream

Thistle took care of every detail — from glassware and linens to coordinating hospitality on the day — ensuring Christopher and Anne could focus on each other and the magic of the moment.

It was a joy to play a small part in such a beautiful love story set in one of Scotland’s most iconic castles.
